My feeling is that the maple seems brighter on an unplugged guitar because the fretboard has a hard finish on it and the rosewood fretboard doesn't. So the finished maple imparts a more biting tone. Once the finish wears to the raw wood, however, all bets are off. The maple loses some high end. The rosewood might sound brighter at that point.
