Also, u can try asking for it in pump a rum, a lot of people can just buy it from greirat and deop it for u. Either early kill on the Dancer or wait until Irithyll and buy it off Greirat. The enemies outside of Vordt's arena only drop the Lothric Knight Sword, Spear and Shield plus the armour set. They won't drop the Ultra Greatsword you want.

I've seen topics where some people who had killed all the bosses and then sent out Greirat were saying that they weren't able to get Greirat to come back or find his ashes since there were not any more bosses left to beat and trigger his return / death. #3.
